Description

This delicious seafood pasta salad combines rotini or fusilli pasta with shrimp, crab meat, and fresh vegetables, all dressed in a creamy mayonnaise sauce.


Ingredients

  • 8 oz rotini or fusilli pasta
  • 1 cup cooked shrimp (medium-sized)
  • 1 cup lump crab meat (canned)
  • 1 cup cherry tomatoes (halved)
  • ¼ cup green onions (chopped)
  • ½ cup mayonnaise
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp dill weed (fresh or dried)
  • Salt and pepper to taste
  • 1 tsp Old Bay Seasoning (optional)

Instructions

  1. Cook the pasta in boiling salted water until al dente (8-10 minutes). Drain and rinse under cold water.
  2. While the pasta cooks, rinse the cooked shrimp and crab meat. If using raw shrimp, sauté them in olive oil until pink and opaque.
  3. Dice cherry tomatoes and chop green onions.
  4. In a large bowl, mix mayonnaise, lemon juice, dill weed, salt, pepper, and optional Old Bay seasoning until smooth.
  5. Add cooled pasta, seafood, and vegetables into the bowl; gently toss to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
