- 2 cups cooked, shredded chicken
- 2 cups cooked broccoli (fresh or frozen)
- 1 cup cooked rice (white or brown)
- 2 cups cheddar cheese (shredded)
- 1 can cream of chicken soup (or mushroom for a vegetarian option)
- ½ cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- ½ cup additional cheese for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, combine the cooked chicken, cooked broccoli, cooked rice, 1 ½ cups of cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir everything until well mixed.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Sprinkle the remaining ½ cup of cheddar cheese on top of the casserole.
- Place the dish in the preheated oven and bake for 30-35 minutes or until the cheese is bubbly and golden on top.
- Once done, let it cool for a few minutes, then serve it warm.
Notes
- This dish can be made ahead of time and refrigerated before baking.
- Use leftover rotisserie chicken for quicker preparation.
- For a vegetarian option, substitute the chicken with additional vegetables.
