- 2 cups fresh cherries, pitted and chopped
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 tsp baking powder
- 3 large eggs, room temperature
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a bowl, mix flour, baking powder, and sugar until well combined.
- In another bowl, cream the softened butter and granulated sugar until fluffy. Add eggs one at a time followed by vanilla extract.
- Gradually combine the dry ingredients into the wet mixture; gently fold in the chopped cherries.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Let cool before slicing and serving.
Notes
- Ensure cherries are pitted to avoid any bitterness.
- For a richer flavor, use organic butter.
