Description

A quick and delicious chicken stir-fry packed with vegetables.


Ingredients

Scale
  • 1 lb chicken breast, thinly sliced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1 carrot, julienned
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 0 cup soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 0 cup chicken broth
  • 1 tsp sesame oil
  • 1 tbsp cornstarch (for thickening)

Instructions

  1. Slice chicken and season lightly.
  2. Whisk sauce ingredients together.
  3. Heat oil in a wok over medium-high heat.
  4. Cook chicken until browned and set aside.
  5. Sauté garlic and ginger until fragrant.
  6. Add vegetables and stir fry until crisp-tender.
  7. Return chicken to the wok.
  8. Pour sauce over ingredients and stir until thickened.
  9. Serve immediately.

Notes

  • For additional flavor, marinate chicken in soy sauce for 30 minutes prior to cooking.
  • Feel free to substitute your favorite vegetables.
