Description

Ingredients

  • Spaghetti
  • Eggs (yolks preferred)
  • Parmesan or Pecorino Romano cheese
  • Bacon or pancetta
  • Olive oil
  • Garlic (optional)

Instructions

  1. Cook spaghetti in salted water until al dente, reserving 1 cup of pasta water.
  2. In a bowl, whisk together egg yolks and grated Parmesan until creamy.
  3. Fry bacon in olive oil until crispy, then set aside.
  4. Toss hot spaghetti with rendered bacon fat, then remove from heat.
