Ingredients
- Spaghetti
- Eggs (yolks preferred)

Instructions
- Cook spaghetti in salted water until al dente, reserving 1 cup of pasta water.
- In a bowl, whisk together egg yolks and grated Parmesan until creamy.
- Fry bacon in olive oil until crispy, then set aside.
- Toss hot spaghetti with rendered bacon fat, then remove from heat.
- Stir in egg-cheese mixture quickly, adding splashes of pasta water until silky.
- Fold in crispy bacon pieces, reserving some for garnish.
- Top with extra Parmesan and cracked black pepper before serving.
Notes
- For a richer flavor, use pancetta instead of bacon.
