- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (28 oz) crushed tomatoes
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 1 pinch saffron threads
- 2 cups low-sodium vegetable broth
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp chili powder (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Pour in crushed tomatoes and add saffron threads, cumin, chili powder (if using), salt, and pepper. Simmer for about 10 minutes.
- Stir in drained chickpeas and pour in vegetable broth. Let simmer on low heat for another 15-20 minutes.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh herbs like cilantro or parsley if desired.
Notes
- For extra flavor, consider adding a dash of lemon juice before serving.
