Delicious cranberry orange muffins that are perfect for breakfast or a snack!
Ingredients

- 1 1/2 cups all-purpose flour
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/2 cup orange juice
- 1/4 cup vegetable oil
- 1 large egg
- 1 tablespoon grated orange peel
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, combine sugar, orange juice, oil, egg, and orange peel.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the cranberries gently.
- Fill muffin cups about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
- For extra moisture, you can add a little bit of sour cream to the batter.
- These muffins can be frozen for up to 3 months; just thaw before serving.
