Description

Creamy Lemon Chicken Orzo with Asparagus is a delightful dish featuring tender chicken and crisp asparagus tossed in a creamy lemony orzo pasta.


Ingredients

  • 2 chicken breasts, cubed
  • 1 cup orzo pasta
  • 1 bunch asparagus, trimmed & cut into 2-inch pieces
  • 1 cup peas (fresh or frozen)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • Juice & zest of 1 lemon
  • ½ cup Parmesan cheese
  • Salt & black pepper to taste

Instructions

  1. Season chicken with salt and pepper, then sear in olive oil until golden and cooked through. Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant.
  3. Add orzo, toasting lightly for 1 minute, then pour in chicken broth. Simmer until orzo is nearly tender.
  4. Stir in cream, lemon juice, zest, and Parmesan until smooth and creamy.
  5. Add asparagus and peas, cooking until bright green and tender.
  6. Return chicken to skillet and stir gently to combine.
  7. Serve warm with extra Parmesan and cracked pepper.

Notes

  • For a lighter version, you can substitute half-and-half for heavy cream.
  • Feel free to add other vegetables like spinach or bell peppers.
