Description

Pillowy gnocchi tossed in a rich, cheesy cream sauce with savory sausage and fresh greens.


Ingredients

Scale
  • 1 lb potato gnocchi
  • 1 lb Italian sausage
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook gnocchi according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil and cook sausage until browned, breaking it into pieces.
  3. Add onion and garlic, cooking until softened.
  4. Stir in heavy cream, Parmesan, salt, pepper, and red pepper flakes; simmer until slightly thickened.
  5. Add spinach and stir until wilted.
  6. Toss in cooked gnocchi, coating well in the sauce.
  7. Serve hot, garnished with parsley and extra Parmesan.

Notes

  • This dish can be made with gluten-free gnocchi if desired.
  • Feel free to add additional vegetables, such as mushrooms or bell peppers, for extra flavor.
