- 1 lb potato gnocchi
- 1 lb Italian sausage
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Cook gnocchi according to package directions; drain and set aside.
- In a large skillet, heat olive oil and cook sausage until browned, breaking it into pieces.
- Add onion and garlic, cooking until softened.
- Stir in heavy cream, Parmesan, salt, pepper, and red pepper flakes; simmer until slightly thickened.
- Add spinach and stir until wilted.
- Toss in cooked gnocchi, coating well in the sauce.
- Serve hot, garnished with parsley and extra Parmesan.
Notes
- This dish can be made with gluten-free gnocchi if desired.
