Description

Creamy Tuscan Chicken Orzo Skillet is a must-try dish featuring tender chicken with sun-dried tomatoes and spinach in a creamy orzo pasta.


Ingredients

  • 2 chicken breasts, sliced
  • 1 cup orzo pasta
  • 1 cup sun-dried tomatoes (drained)
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup Parmesan cheese
  • Salt & black pepper to taste

Instructions

  1. Season chicken with salt and pepper, then sear in olive oil until golden and cooked through. Remove and set aside.
  2. In the same skillet, sauté garlic until fragrant.
  3. Stir in orzo and toast for 1 minute.
  4. Pour in chicken broth and simmer until pasta is tender, about 10 minutes.
  5. Stir in cream, Parmesan, sun-dried tomatoes, and spinach until creamy.
  6. Return chicken to the skillet, simmer 2–3 minutes to blend flavors.
  7. Serve hot with extra Parmesan on top.

Notes

  • For a lighter version, you can substitute heavy cream with half-and-half.
  • Feel free to add other vegetables like bell peppers or mushrooms.
  • Leftovers can be stored in the refrigerator for up to 3 days.
