- 2 chicken breasts, sliced
- 1 cup orzo pasta
- 1 cup sun-dried tomatoes (drained)
- 2 cups fresh spinach
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup Parmesan cheese
- Salt & black pepper to taste
Instructions
- Season chicken with salt and pepper, then sear in olive oil until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic until fragrant.
- Stir in orzo and toast for 1 minute.
- Pour in chicken broth and simmer until pasta is tender, about 10 minutes.
- Stir in cream, Parmesan, sun-dried tomatoes, and spinach until creamy.
- Return chicken to the skillet, simmer 2–3 minutes to blend flavors.
- Serve hot with extra Parmesan on top.
Notes
- For a lighter version, you can substitute heavy cream with half-and-half.
- Feel free to add other vegetables like bell peppers or mushrooms.
- Leftovers can be stored in the refrigerator for up to 3 days.
