Ingredients

- 2 cups mashed potatoes
- 1 cup mozzarella or cheddar cheese cubes
- 1 cup panko breadcrumbs
- 2 eggs
- 2 green onions or chives, chopped
- 1 tsp garlic powder
- Salt & pepper to taste
- Dipping sauce (chipotle mayo or cheese sauce)
Instructions
- Mix mashed potatoes with green onions, garlic powder, salt, and pepper.
- Scoop potato mixture and flatten; place a cheese cube in the center and roll into a ball.
- Dip each ball in beaten egg, then coat with panko breadcrumbs.
- Heat oil to 350°F (175°C) and fry balls until crispy and golden.
- Drain on paper towels and sprinkle with fresh chives.
- Serve hot with dipping sauce in the center of the platter.
- Enjoy while cheese is still gooey inside.
