Description

Golden fried potato bites bursting with gooey melted cheese, served with dipping sauce.


Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 cup mozzarella or cheddar cheese cubes
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 2 green onions or chives, chopped
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Dipping sauce (chipotle mayo or cheese sauce)

Instructions

  1. Mix mashed potatoes with green onions, garlic powder, salt, and pepper.
  2. Scoop potato mixture and flatten; place a cheese cube in the center and roll into a ball.
  3. Dip each ball in beaten egg, then coat with panko breadcrumbs.
  4. Heat oil to 350°F (175°C) and fry balls until crispy and golden.
  5. Drain on paper towels and sprinkle with fresh chives.
  6. Serve hot with dipping sauce in the center of the platter.
  7. Enjoy while cheese is still gooey inside.
