- 1 pound baby potatoes (Yukon Gold or red)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 1 tablespoon fresh rosemary or thyme (chopped)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and scrub the baby potatoes, then pat dry.
- In a large bowl, combine the olive oil, garlic powder, salt, pepper, and herbs. Toss the potatoes until evenly coated.
- Spread the seasoned potatoes in a single layer on a parchment-lined baking sheet.
- Roast for 30-35 minutes, turning halfway through until golden brown and fork-tender.

- For extra flavor, consider adding a sprinkle of parmesan cheese before serving.
