Ingredients

  • 24 Oreo cookies (crushed)
  • 5 tbsp unsalted butter (melted)
  • 8 oz cream cheese (softened)
  • 1 ½ cups fresh raspberries
  • 1 cup heavy cream (divided)
  • ½ cup powdered sugar
  • 1 cup dark chocolate chips
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • Extra raspberries & chocolate chunks for garnish

Instructions

  1. Preheat oven to 350°F. Mix crushed Oreos with melted butter, press into a pie pan, and bake for 10 minutes. Cool.
  2. Blend raspberries with granulated sugar, then strain to remove seeds.
  3. Beat cream cheese with powdered sugar and vanilla until smooth. Fold in raspberry puree.
  4. Whip ½ cup heavy cream to soft peaks, then fold into raspberry mixture. Spread filling over crust. Chill for 4 hours.
  5. Heat remaining cream and pour over dark chocolate chips; stir into ganache.
  6. Pour ganache over chilled pie, letting it drip down the sides.
  7. Garnish with fresh raspberries and chocolate chunks before serving.
