- 5 tbsp unsalted butter (melted)
- 8 oz cream cheese (softened)
- 1 ½ cups fresh raspberries
- 1 cup heavy cream (divided)
- ½ cup powdered sugar
- 1 cup dark chocolate chips
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- Extra raspberries & chocolate chunks for garnish
Instructions
- Preheat oven to 350°F. Mix crushed Oreos with melted butter, press into a pie pan, and bake for 10 minutes. Cool.
- Blend raspberries with granulated sugar, then strain to remove seeds.
- Beat cream cheese with powdered sugar and vanilla until smooth. Fold in raspberry puree.
- Whip ½ cup heavy cream to soft peaks, then fold into raspberry mixture. Spread filling over crust. Chill for 4 hours.
- Heat remaining cream and pour over dark chocolate chips; stir into ganache.
- Pour ganache over chilled pie, letting it drip down the sides.
- Garnish with fresh raspberries and chocolate chunks before serving.
