Description

Delicious and fluffy pancakes made with ricotta cheese and chocolate chips, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup ricotta cheese
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 cup semi-sweet chocolate chips
  • 2 tbsp melted butter

Instructions

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, mix ricotta cheese, milk, eggs, and melted butter until smooth.
  3. Gently fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  4. Stir in chocolate chips evenly.
  5. Heat a non-stick skillet over medium-low heat. Pour about 1/4 cup of batter onto the skillet for heart shapes (using a mold if desired).
  6. Cook until bubbles form on top (about 2-3 minutes), then flip to cook the other side until golden brown.

Notes

  • For best results, don’t overmix the batter.
  • You can use a non-stick cooking spray for the skillet if needed.
