Description

Ingredients

  • 1 lb lean ground beef
  • 8 oz penne or rotini pasta
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, chopped
  • 3 cups low-sodium beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onions and minced garlic for about 3 minutes until fragrant.
  2. Add ground beef to the pot, cooking until browned (about 5-7 minutes) while breaking it apart with a spatula.
  3. Stir in pasta, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Ensure the pasta is submerged in liquid.
  4. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes or until pasta is al dente, stirring occasionally.
  5. Remove from heat and stir in grated Parmesan cheese until melted. Adjust seasoning as desired before serving.
