- 1 lb lean ground beef
- 8 oz penne or rotini pasta
- 4 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 3 cups low-sodium beef broth
- 1 can (14 oz) diced tomatoes
- 2 tsp Italian seasoning
- ½ cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onions and minced garlic for about 3 minutes until fragrant.
- Add ground beef to the pot, cooking until browned (about 5-7 minutes) while breaking it apart with a spatula.
- Stir in pasta, diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Ensure the pasta is submerged in liquid.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes or until pasta is al dente, stirring occasionally.
- Remove from heat and stir in grated Parmesan cheese until melted. Adjust seasoning as desired before serving.
