Ingredients

  • 2 ripe mangoes, diced
  • 1/4 cup freshly squeezed lime juice
  • 6 cups mixed greens
  • 1/2 red onion, thinly sliced
  • 2 tbsp honey
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the Chicken: Preheat your grill or skillet over medium-high heat. Season chicken with chipotle powder, salt, and pepper. Grill for 6-7 minutes per side until fully cooked.
  2. Prepare the Dressing: In a small bowl, whisk together lime juice, honey, and chopped cilantro until smooth.
  3. Chop the Mango and Veggies: Dice ripe mangoes and slice red onion while the chicken cools slightly.
  4. Toss Everything Together: Slice the grilled chicken into strips. In a large bowl, combine mixed greens, mango cubes, red onion slices, and chicken strips.
