- 1 cup long-grain rice
- 2 tbsp vegetable oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup tomato sauce
- 2 cups chicken broth (or water)
- 1 tsp ground cumin
- 1 tsp chili powder
- Fresh cilantro (optional), for garnish
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a large skillet over medium heat, add vegetable oil. Once hot, sauté the chopped onions until translucent.
- Stir in the minced garlic for about 30 seconds until fragrant.
- Add the uncooked rice to the skillet and toast for a few minutes until it turns lightly golden.
- Mix in the tomato sauce, cumin, and chili powder until the rice is evenly coated.
- Pour in chicken broth (or water) and bring to a boil. Reduce heat to low, cover tightly, and simmer for about 20 minutes or until liquid is absorbed.
- Fluff with a fork and garnish with fresh cilantro before serving.
