Ingredients

  • 2 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup tomato sauce
  • 2 cups chicken broth (or water)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Fresh cilantro (optional), for garnish

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, add vegetable oil. Once hot, sauté the chopped onions until translucent.
  3. Stir in the minced garlic for about 30 seconds until fragrant.
  4. Add the uncooked rice to the skillet and toast for a few minutes until it turns lightly golden.
  5. Mix in the tomato sauce, cumin, and chili powder until the rice is evenly coated.
  6. Pour in chicken broth (or water) and bring to a boil. Reduce heat to low, cover tightly, and simmer for about 20 minutes or until liquid is absorbed.
  7. Fluff with a fork and garnish with fresh cilantro before serving.
