Juicy seared lamb chops drizzled in a rich garlic-herb sauce, served with creamy mashed potatoes.
Ingredients

- 4 Lamb chops
- 4 Garlic cloves
- Fresh thyme (or rosemary)
- 1/2 cup Red wine
- 2 tbsp Olive oil
- 2 tbsp Butter
- 1 tbsp Dijon mustard
- 1/2 cup Beef or chicken stock
- Fresh parsley (for garnish)
- Salt & pepper (to taste)
Instructions
- Pat lamb chops dry, season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat, sear lamb chops for 3–4 minutes per side until browned.
- Add garlic cloves, butter, and thyme, basting chops as they cook. Remove when medium-rare to medium.
- In the same skillet, deglaze with red wine, scraping up browned bits.
- Add stock and Dijon mustard, reduce until slightly thickened.
- Return lamb briefly to coat in sauce, then plate over mashed potatoes.
- Spoon sauce over, garnish with chopped parsley, and serve hot.
Notes
- For best results, use fresh herbs.
