Description

Delicious gingerbread cookies perfect for the holiday season!


Ingredients

  • ½ cup unsalted butter
  • ⅔ cup dark brown sugar, (packed)
  • 1 large egg
  • ½ cup molasses
  • 1 tablespoon white vinegar
  • 3 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons ground ginger
  • ½ teaspoon ground clove
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Holiday Sprinkles for decorating (optional)
  • 2 cups powdered sugar
  • 1 ½ tablespoons half and half (or whole milk)

Instructions

  1. In a medium bowl, whisk together the all-purpose flour, cinnamon, ground ginger, clove, baking soda, and salt. Set aside.
  2. In a large bowl or in the bowl of a stand mixer, cream the butter and dark brown sugar until combined.
  3. Mix in the egg until light and fluffy, then add the molasses and mix again until light in color.
  4. Blend in the white vinegar until incorporated.
  5. Add the dry ingredients and mix until a smooth dough forms, with no dry spots remaining.
  6. Place the dough in the center of plastic wrap, wrap it completely, and press it into a disk.
  7. Refrigerate for at least 4 hours or chill overnight.
  8. Preheat the oven to 350°F (180°C) or 160°C fan oven. Line three cookie sheets with parchment paper or a silicone mat and set aside.
  9. Lightly flour a clean surface. Unwrap the dough, dust the top with flour, and roll the dough to a thickness of ¼ inch.
  10. Cut out cookies with a gingerbread man cutter and place them on the prepared cookie sheets about 2 inches apart.
  11. Bake for 8 to 10 minutes or until set.
  12. Cool on the sheet for 10 minutes, then transfer to a wire rack to cool completely.
  13. In a small bowl, stir the powdered sugar with the half-and-half until smooth. Adjust with a tiny amount of liquid or powdered sugar if needed.
  14. Transfer the icing to a piping bag fitted with a small round tip and decorate the cooled cookies.
