Description

A hearty fall-inspired pasta with smoky sausage, roasted Brussels sprouts, and sweet butternut squash.


Ingredients

  • Smoked sausage (sliced)
  • Bowtie (farfalle) pasta
  • Brussels sprouts
  • Butternut squash (cubed)
  • Olive oil
  • Garlic
  • Parmesan cheese
  • Fresh thyme
  • Salt & pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts and butternut squash with olive oil, garlic, salt, and pepper.
  3. Roast for 20–25 minutes until golden.
  4. Cook bowtie pasta until al dente, reserving some pasta water.
  5. In a skillet, sear sausage slices until browned.
  6. Combine pasta, roasted veggies, and sausage in a large skillet.
  7. Add a splash of pasta water and toss with Parmesan.
  8. Season with thyme, salt, and pepper.
  9. Serve warm with extra Parmesan sprinkled on top.

Notes

  • For a vegetarian option, omit the sausage and add more vegetables.
  • Feel free to adjust the seasoning to taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
