Description
A hearty fall-inspired pasta with smoky sausage, roasted Brussels sprouts, and sweet butternut squash.
Ingredients
- Smoked sausage (sliced)
- Bowtie (farfalle) pasta
- Brussels sprouts
- Butternut squash (cubed)
- Olive oil
- Garlic
- Parmesan cheese
- Fresh thyme
- Salt & pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts and butternut squash with olive oil, garlic, salt, and pepper.
- Roast for 20–25 minutes until golden.
- Cook bowtie pasta until al dente, reserving some pasta water.
- In a skillet, sear sausage slices until browned.
- Combine pasta, roasted veggies, and sausage in a large skillet.
- Add a splash of pasta water and toss with Parmesan.
- Season with thyme, salt, and pepper.
- Serve warm with extra Parmesan sprinkled on top.
Notes
- For a vegetarian option, omit the sausage and add more vegetables.
- Feel free to adjust the seasoning to taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
