Description

A quick and healthy stir-fry featuring chicken and fresh broccoli in a savory sauce.


Ingredients

  • 3 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tbsp cornstarch
  • 1/2 cup water or chicken broth

Instructions

  1. Prepare ingredients by washing and chopping vegetables. Cut chicken into bite-sized pieces.
  2. Marinate chicken in a bowl with soy sauce, ginger, garlic, and cornstarch for about 15 minutes.
  3. Heat sesame oil in a large skillet over medium-high heat. Sauté chicken until golden brown (5-7 minutes).
  4. Add broccoli and other desired vegetables; sauté until tender-crisp (3-4 minutes).
  5. Mix water or broth with additional soy sauce and red pepper flakes; pour over stir fry and combine.
  6. Simmer for another minute until heated through.
