Ingredients

- 2 cans (15 oz each) canned chickpeas, rinsed and drained
- 2 tsp smoked paprika
- 2 cups vegetable broth
- 2 medium carrots, sliced into rounds
- 1 medium onion, chopped finely
- 4 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 tsp fresh thyme (or ½ tsp dried thyme)

- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pot or Dutch oven over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
- Stir in carrots and bell peppers; sauté for about 5 minutes until they start to soften.
- Add chickpeas, smoked paprika, thyme, salt, and pepper; mix well.
- Pour in vegetable broth and stir to combine. Bring to a simmer.
- Cover the pot with a lid or foil and transfer it to the preheated oven. Bake for 30 minutes.
- Remove from the oven, let cool slightly, then serve warm.
Notes
- For added flavor, you can substitute vegetable broth with chicken broth if not vegetarian.
- Feel free to add other vegetables like zucchini or spinach for more variety.
