Description

A healthy and hearty dish featuring chickpeas and vibrant vegetables baked to perfection.


Ingredients

  • 2 cans (15 oz each) canned chickpeas, rinsed and drained
  • 2 tsp smoked paprika
  • 2 cups vegetable broth
  • 2 medium carrots, sliced into rounds
  • 1 medium onion, chopped finely
  • 4 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • to taste Salt and pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pot or Dutch oven over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Stir in carrots and bell peppers; sauté for about 5 minutes until they start to soften.
  4. Add chickpeas, smoked paprika, thyme, salt, and pepper; mix well.
  5. Pour in vegetable broth and stir to combine. Bring to a simmer.
  6. Cover the pot with a lid or foil and transfer it to the preheated oven. Bake for 30 minutes.
  7. Remove from the oven, let cool slightly, then serve warm.

Notes

  • For added flavor, you can substitute vegetable broth with chicken broth if not vegetarian.
  • Feel free to add other vegetables like zucchini or spinach for more variety.
