Description

A delightful and easy Caprese Quick Bread packed with fresh flavors.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, diced
  • 1/2 cup fresh basil leaves, chopped
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, black pepper, and garlic powder. Whisk until evenly distributed.
  3. Fold in the cherry tomatoes, mozzarella cheese, and chopped basil.
  4. In another bowl, whisk together the eggs, milk, and olive oil until well combined.
  5. Pour the wet mixture into the dry ingredients. Gently stir until just combined.
  6. Grease a loaf pan or line it with parchment paper. Pour the batter into the prepared pan and spread it out evenly.
  7. Place the loaf pan in the oven and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and enjoy your warm Caprese Quick Bread!
