- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella cheese, diced
- 1/2 cup fresh basil leaves, chopped
- 3 large eggs
- 1/2 cup milk
- 1/4 cup olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the all-purpose flour, baking powder, salt, black pepper, and garlic powder. Whisk until evenly distributed.
- Fold in the cherry tomatoes, mozzarella cheese, and chopped basil.
- In another bowl, whisk together the eggs, milk, and olive oil until well combined.
- Pour the wet mixture into the dry ingredients. Gently stir until just combined.
- Grease a loaf pan or line it with parchment paper. Pour the batter into the prepared pan and spread it out evenly.
- Place the loaf pan in the oven and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and enjoy your warm Caprese Quick Bread!

- This bread is best enjoyed fresh but can be stored for a few days in an airtight container.
