A delicious and hearty classic Reuben sandwich made with rye bread, corned beef, Swiss cheese, and sauerkraut.

- 2 slices rye bread
- 4 oz corned beef
- 1/4 cup sauerkraut (drained)
- 2 slices Swiss cheese
- 2 tbsp Russian or Thousand Island dressing
- 1 tbsp unsalted butter (for grilling)
Instructions
- Preheat your skillet over medium heat and melt the butter.
- Spread Russian or Thousand Island dressing on one side of each slice of rye bread.
- Layer corned beef on one slice, followed by Swiss cheese and sauerkraut.
- Top with the second slice of bread, dressing side down, and gently press together.
- Grill the sandwich in the skillet until golden brown and crispy, about 4-5 minutes per side.
- Cut in half and serve hot with extra dressing for dipping.
