Description

A delicious breakfast casserole made with hash browns, eggs, cheese, and veggies.


Ingredients

  • 4 cups frozen hash browns
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (red or yellow)
  • 1 cup diced onion (yellow or sweet)
  • 1/2 cup whole milk
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil or butter over medium heat. Sauté diced onions and bell peppers until softened (about 5 minutes).
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Stir in sautéed vegetables, cheese, and hash browns.
  4. Pour mixture into the baking dish and spread evenly.
  5. Bake for 35-40 minutes until golden brown and puffed up. Let rest for 10 minutes before serving.
