- 4 cups frozen hash browns
- 8 large eggs
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (red or yellow)
- 1 cup diced onion (yellow or sweet)
- 1/2 cup whole milk
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, heat olive oil or butter over medium heat. Sauté diced onions and bell peppers until softened (about 5 minutes).
- In a bowl, whisk together eggs, milk, salt, and pepper. Stir in sautéed vegetables, cheese, and hash browns.
- Pour mixture into the baking dish and spread evenly.
- Bake for 35-40 minutes until golden brown and puffed up. Let rest for 10 minutes before serving.
Notes
- This casserole can be prepared ahead of time and refrigerated before baking.
- Feel free to substitute other vegetables or cheeses based on your preference.
