Ingredients

- 2 cups fresh blueberries
- 1 cup heavy whipping cream, cold
- 1/2 cup granulated sugar
- 1/4 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1 tsp pure vanilla extract
- 1 tbsp unflavored gelatin powder mixed with 2 tbsp warm water
Instructions
- Rinse blueberries gently under cold water and pat dry.
- In a large mixing bowl, beat the cold heavy whipping cream with an electric mixer until soft peaks form (about 3-5 minutes).
- Gradually add sugar, lemon juice, lemon zest, and vanilla extract while continuing to whip until stiff peaks form (about another minute).
- Dissolve gelatin powder in warm water as per package instructions; allow it to cool slightly before folding into the whipped cream mixture.
- Gently fold in the blueberries using a spatula to maintain the fluffy texture.
- Transfer to a serving dish or individual cups, cover with plastic wrap, and refrigerate for at least 1-2 hours until set.
Notes
- For best results, use very fresh blueberries.
- Make sure the heavy cream is cold for better whipping.
