Description

This delicious blueberry mousse is a refreshing dessert perfect for any occasion.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup heavy whipping cream, cold
  • 1/2 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1 tsp pure vanilla extract
  • 1 tbsp unflavored gelatin powder mixed with 2 tbsp warm water

Instructions

  1. Rinse blueberries gently under cold water and pat dry.
  2. In a large mixing bowl, beat the cold heavy whipping cream with an electric mixer until soft peaks form (about 3-5 minutes).
  3. Gradually add sugar, lemon juice, lemon zest, and vanilla extract while continuing to whip until stiff peaks form (about another minute).
  4. Dissolve gelatin powder in warm water as per package instructions; allow it to cool slightly before folding into the whipped cream mixture.
  5. Gently fold in the blueberries using a spatula to maintain the fluffy texture.
  6. Transfer to a serving dish or individual cups, cover with plastic wrap, and refrigerate for at least 1-2 hours until set.

Notes

  • For best results, use very fresh blueberries.
