Description

Delicious roasted salmon fillets marinated in citrus juices and garlic, topped with fresh herbs.


Ingredients

Scale
  • 4 fillets salmon (approx. 6 oz each)
  • 1/4 cup extra virgin olive oil
  • Juice and zest of 1 lemon
  • Juice and zest of 1 orange
  • 3 cloves garlic, minced
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley or dill

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine olive oil, lemon juice, orange juice, garlic, salt, and pepper.
  3. Place salmon fillets in a baking dish and pour the marinade over them. Let marinate for 15-30 minutes.
  4. Layer thin slices of lemon and orange on top of the marinated salmon.
  5. Roast in the preheated oven for 15-20 minutes until the salmon flakes easily with a fork.
  6. Garnish with fresh herbs before serving.

Notes

  • For best flavor, chicken or fish can be marinated for longer, even overnight.
  • Feel free to add more herbs or spices based on your preference.
