Description
Delicious roasted salmon fillets marinated in citrus juices and garlic, topped with fresh herbs.
Ingredients

- 4 fillets salmon (approx. 6 oz each)
- 1/4 cup extra virgin olive oil
- Juice and zest of 1 lemon
- Juice and zest of 1 orange
- 3 cloves garlic, minced
- to taste Salt
- to taste Pepper
- for garnish Fresh parsley or dill
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine olive oil, lemon juice, orange juice, garlic, salt, and pepper.
- Place salmon fillets in a baking dish and pour the marinade over them. Let marinate for 15-30 minutes.
- Layer thin slices of lemon and orange on top of the marinated salmon.
- Roast in the preheated oven for 15-20 minutes until the salmon flakes easily with a fork.
- Garnish with fresh herbs before serving.
Notes
- For best flavor, chicken or fish can be marinated for longer, even overnight.
- Feel free to add more herbs or spices based on your preference.
