- 1 frozen pie crust (9-inch)
- 2 cups sliced onions (about 2 medium onions)
- 1 cup low-fat cottage cheese
- 3 large eggs
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh thyme or parsley (chopped)
Instructions
- Preheat your oven to 375°F (190°C). Place the frozen pie crust in a pie pan.
- In a skillet over medium heat, add a splash of olive oil and sauté onions until golden brown and caramelized (15-20 minutes).
- In a bowl, mix together cottage cheese, eggs, salt, pepper, and herbs until smooth.
- Fold the caramelized onions into the cheese mixture gently.
- Pour the mixture into the prepared pie crust evenly.
- Bake for 30-35 minutes until golden brown on top. Serve warm or cold.
