- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup bell peppers (any color), diced
- 1 cup pineapple chunks (fresh or canned)
- ½ cup ketchup
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tsp sesame oil
Instructions
- Heat a large skillet over medium heat and add a splash of oil. Sauté minced garlic and diced onion until fragrant and translucent.
- Add ground chicken to the skillet, breaking it apart as it cooks for about 5-7 minutes until no longer pink.
- Stir in diced bell peppers and pineapple chunks, cooking for an additional 5 minutes until vibrant.
- In a small bowl, whisk together ketchup, soy sauce, brown sugar, rice vinegar, and sesame oil until smooth.
- Pour the sauce over the chicken mixture, stirring to coat evenly. Let simmer for 3-5 minutes until heated through.
