- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 1/2 cup plain Greek yogurt
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 to 3 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, mix sugar and lemon zest until fragrant, then add yogurt, oil, eggs, lemon juice, and vanilla extract.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Pour the batter into the loaf pan and bake for 50–55 minutes or until a toothpick comes out clean.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
- Whisk powdered sugar with lemon juice to create a glaze, and drizzle over the cooled loaf.

- Store leftovers in an airtight container at room temperature for up to 3 days.
- This loaf can also be frozen for up to 2 months.
