Description
Deliciously spiced baked sweet potatoes, perfect as a side dish or a snack!
Ingredients

- 1 pound sweet potatoes
- 1 tablespoon avocado oil
- 1 tablespoon maple syrup
- 1/4 teaspoon chipotle powder
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons lime juice
Instructions
- Preheat oven to 400 degrees F.
- In a small bowl, combine the avocado oil, maple syrup, chipotle powder, paprika, onion powder, salt, and pepper. Whisk well and set aside.
- Rinse the sweet potatoes, slice in half lengthwise, then cut diagonal slits about 1 inch apart and 3/4 of the way down in both directions.
- Place the washed and scored sweet potatoes into a large bowl or a large ziplock bag, and pour in the oil and spice mixture. Seal the bag and then shake lightly until the potatoes are evenly coated.
- Spray a baking sheet with non-stick cooking spray, then remove the potatoes from the bowl or bag and place in a single layer on the baking sheet, with the cut side facing up.
- Bake for about 35-45 minutes, or until the edges are slightly crispy and golden brown.
- Once fully cooked, remove the sweet potatoes from the oven, squeeze the fresh lime juice over the top of each potato and serve immediately. Enjoy!
