- 2 cups sushi rice (cooked & cooled)
- 4 whole strawberries (plus extra for topping)
- ½ cup cream cheese, softened
- 2 tbsp sugar
- 2 tbsp strawberry jam or sauce
- 1 tsp vanilla extract
- Shredded coconut (optional for coating)
Instructions
- Mix cream cheese, sugar, and vanilla until smooth.
- Spread cooled sushi rice evenly on a bamboo sushi mat lined with plastic wrap.
- Place a whole strawberry in the center and spread cream cheese mixture around it.
- Roll tightly, sealing edges with a bit of water.
- Slice into sushi-like rounds.
- Top each piece with a fresh strawberry slice.
- Drizzle strawberry sauce over rolls before serving.

- Chill in the fridge for best flavor.
- Shredded coconut can be used for added texture.
