- 1 lb pork shoulder or pork loin, thinly sliced
- 6 corn tortillas
- 1 cup pineapple chunks
- ½ cup diced red onion
- 2 tbsp adobo sauce (from chipotle peppers)
- 1 tbsp vinegar
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Marinate pork with adobo sauce, vinegar, olive oil, garlic, and spices for at least 1 hour (overnight best).
- Heat a skillet or grill, cook pork until charred and fully cooked, about 8–10 minutes.
- Warm tortillas over open flame or skillet until slightly charred and flexible.
- Dice cooked pork into bite-sized pieces and spoon onto tortillas.
- Top with pineapple chunks, diced onion, and fresh cilantro.
- Squeeze lime juice over tacos before serving.
- Enjoy immediately while hot and fresh.
Notes
- For best flavor, marinate the pork overnight.
- Adjust the spice level by adding more or less chili powder.
- Serve with additional lime wedges for extra flavor.
