Description

Smoky marinated pork tucked into warm tortillas, topped with sweet pineapple and fresh salsa.


Ingredients

  • 1 lb pork shoulder or pork loin, thinly sliced
  • 6 corn tortillas
  • 1 cup pineapple chunks
  • ½ cup diced red onion
  • 2 tbsp adobo sauce (from chipotle peppers)
  • 1 tbsp vinegar
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Marinate pork with adobo sauce, vinegar, olive oil, garlic, and spices for at least 1 hour (overnight best).
  2. Heat a skillet or grill, cook pork until charred and fully cooked, about 8–10 minutes.
  3. Warm tortillas over open flame or skillet until slightly charred and flexible.
  4. Dice cooked pork into bite-sized pieces and spoon onto tortillas.
  5. Top with pineapple chunks, diced onion, and fresh cilantro.
  6. Squeeze lime juice over tacos before serving.
  7. Enjoy immediately while hot and fresh.

Notes

  • For best flavor, marinate the pork overnight.
  • Adjust the spice level by adding more or less chili powder.
