Description

Delicious smashed baby potatoes topped with a garlic basil pesto, perfect as a side dish.


Ingredients

Scale
  • 1 lb baby potatoes
  • 1 cup fresh basil leaves
  • 4 garlic cloves
  • 1/3 cup extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Wash baby potatoes thoroughly and place them in a large pot filled with salted water. Bring to a boil.
  2. Boil for 15-20 minutes until fork-tender; drain and let cool slightly.
  3. Smash each potato gently with a fork or potato masher until flattened.
  4. Preheat oven to 425°F (220°C). Arrange smashed potatoes on a parchment-lined baking sheet.
  5. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 25-30 minutes, flipping halfway through until golden brown.
  6. While baking, blend basil, garlic, Parmesan, and olive oil in a food processor to make the garlic pesto.
  7. Serve hot with a drizzle of garlic pesto.
