A delicious and healthy chia pudding layered with raspberry compote, perfect for a snack or dessert.
Ingredients

- 1/2 cup chia seeds
- 2 cups unsweetened almond milk (or any milk of choice)
- 2 tsp pure vanilla extract
- 2–4 tbsp maple syrup or honey (optional)
- 1 cup raspberries (fresh or frozen)
- Fresh raspberries and mint leaves for garnish (optional)
Instructions
- In a medium mixing bowl, combine chia seeds, almond milk, vanilla extract, and maple syrup. Whisk vigorously for 30 seconds.
- Cover and refrigerate for 30 minutes. Stir to prevent clumps.
- Chill for at least 4 hours or overnight until custardy.
- Mash fresh raspberries or pulse them for a smoother compote.
- Layer chia pudding and raspberry mixture in serving glasses.
- Garnish with fresh raspberries and mint leaves. Serve chilled.
Notes
- For a sweeter pudding, adjust the amount of maple syrup or honey to taste.
- This recipe can be made the night before for a quick grab-and-go breakfast.
